H&S Bagel Shop Uses Water Filter to Create East Coast Bagels

NASHVILLE, Tennessee (WTVF) – A bagel baker from New Jersey opens a store in Nashville mimicking New York City water with a filter to bake East Coast-style bagels.

Hector Sanchez learned to roll bagels as a teenager.

“It took me about three months to get them to where I would always be able to do them right. And it took me another three months to do them pretty quickly, so it’s worth it for me to do it. “Sanchez explained.

Forty years later, after a career as a teacher, he decided to move to Nashville to be closer to his sister and open a bagel shop.

“When I visited here I noticed we didn’t have any east coast style bagels here. So I came here, I got this idea, I lived it with my wife. that she was okay with that, we ran with that, ”Sanchez recalled.

Sanchez has spent more than a year researching and opening a location for his store while his wife and children are still in New Jersey. Away from his family and awake everyday to roll over 500 bagels, he said, “I put a lot of love into what I do.”

In his decades of rolling bagels, Sanchez has said the ones in Nashville are the best he’s ever made because of the consistency of the batter.

H&S Bagels uses a water filter that mimics New York City water by infusing minerals into the water that H&S Bagels owner and founder Hector Sanchez says gives their bagels an East Coast flavor.

Sanchez said he owed a lot to the water filter he installed.

“I have a machine that mimics water – mimics water in New York. This machine … takes water from here, passes it through four filters where it cleans it completely, and then puts all of it in. minerals and stuff within New York City settings, but at the best specs to make bread within those settings, ”Sanchez explained.“ I’ve been riding for 40 years. And my dough has never been so consistent as when I got this. “

His clients also notice this difference.

“People stopped me from cooking and said, ‘Are you the owner? And I said ‘yes’. And he says to me: ‘I just need to tell you that’, he says to me ‘I love your bagels’, “Sanchez recalls.” We even have a few families that come, about an hour on Sunday to buy bagels. “

A woman told him that thanks to her shop, her parents no longer needed to mail her bagels from New Jersey every month.

Sanchez explained: “A customer says he’s been here for 17 years and he thanked me, he said,” the only time I have our bagels is when I come home to visit my family. “”

Waking up at 4:40 am everyday, Sanchez admits that hand-rolling bagels every day is hard work, but said he wouldn’t want it any other way.

“It’s hard for me to explain the difference between a machine-made bagel and a hand-rolled bagel,” Sanchez said. “Hand-rolled bagel, you don’t all get exactly the same. But, I think you put a lot of love into it – I love to roll bagels. I could, I could work 10 hours a day, then rolling six more without any problem because it’s something that’s therapeutic. “

H&S Bagels donates the leftovers to the Nashville Rescue Mission each day and prepares a new batch each morning.

“It’s a dream that I have a business,” Sanchez said with a smile. “In the three months that I’ve been here it’s been an incredible success … I love the people of Tennessee.”
